HoJo has planned a lavish spread for its Mughlai Food festival between May 18-26.
Chef Amazad Khan, a master of Nawabi flavours from north India, has specially come down for the Food Festival to introduce a never-before dining experience.
Chef Khan is with Ramada Plaza, Agra, a Wyndham group hotel, and will treat Bengaluru to Mughlai flavours.
Chef Amazad wants to introduce Bengalureans to the subtleties of a wholesome Mughlai experience. “Mughlai khana is mild and rich. It is made with cashew, curd, brown onion, ghee, butter and other ingredients. Both vegetarian and non-vegetarian recipes are flavourful. Mughlai cuisine takes time to make and has to be well prepared a few hours in advance,” says Amazad.
The chef who has had a rich 14 years of experience comes from a family of cooks who are legendary and well-known for this type of cuisine and one can say the art has been easily passed down generations.
Whether its paneer tikka, gravy, dum biryani, murg bannu kabab, sabj kabab, begum kheema machchi, all of them go through the chef’s experienced hands to give it a special flavour.
“I am looking forward to people from the city, essentially those used to the south Indian flavours, as well as those who have migrated here to come and experience authentic Mughlai food during this festival,” he adds.
Chef Amazad is from Uttar Pradesh and has planned a delectable spread of starters, main course and desserts that will make those who cook from Agra to Afghanistan proud.
